The afternoon tea is inspired by the flora of British gardens and designed by leading pastry Chef Jessica Preálpato. Awarded the world’s best pastry chef 2019 and Pastry Chef of the Year by Gault et Millau in 2020, Jessica works with seasonal, locally sourced produce, to celebrate the best ingredients available in England. By focusing on unexpected pairings that disrupt the classic British tradition of Afternoon Tea, ‘A Tribute to Nature’ creates a sensorial dining experience.
True to Jessica’s signature style, the afternoon tea menu enhances the natural sweetness of whole fruits without adding refined sugars, by adding carefully selected layers of flavours without compromising the key ingredients and their natural taste. The afternoon tea menu features dishes such as the savoury truffle croissants filled with duck egg and black truffle, dried grape scones served with orange, grapefruit, apple, vanilla and cinnamon, and patisseries including the finger chocolate hazelnut and star anis, a citrus fruit éclair in addition to a pear and kumquat tart.
