Viajante87 continues The Culture Exchange Supper Club with Puerto Rico’s La Factoría and Chef Raúl Correa this March

Viajante87, the Notting Hill gem part of Thesleff Group, is continuing its ever-popular series of hosting the best bars and restaurants from across Latin America, showcasing the region’s vibrant food and drink cultures to London. Following the incredible kickoff of the 2025 series on February 28th with Buenos Aires’ Tres Monos and Niño Gordo, Viajante87 is keeping the momentum going with another unmissable edition of The Culture Exchange. On Monday 31st March, the award-winning bar will welcome Puerto Rico’s legendary La Factoría and Chef Raúl Correa for an exclusive one-night-only experience.
For this special evening, diners will have the opportunity to taste a selection of dishes from Chef Raúl Correa, the celebrated chef from BaCoa Finca + Fogon. Known for his contemporary approach to Puerto Rican cuisine, Chef Correa masterfully blends traditional island flavors with modern techniques, creating a menu that is both bold and refined. His culinary philosophy showcases the vibrant ingredients and deep-rooted food culture of Puerto Rico, making this a rare opportunity to experience his cooking outside the Caribbean.


The four course menu will include Escabeche de Guineitos y Carrucho, a green banana and conch escabeche served with pickled vegetables, followed by Funche de Apio, a dish of soft polenta style grits, made with coconut water and root vegetables, served with a blue crab stew. For the main course, guests will enjoy Conchinillo, suckling pig served with bread fruit mouseline and a sugar cane and rum sauce. Lastly, to round off the feast, is Guanime – a traditional cornmeal dumpling which the chefs have sweetened with ripe plantain and chocolate, served wrapped in a banana leaf and paired with a passionfruit ice cream.
Paired with each dish will be a selection of expertly crafted cocktails created in collaboration between the La Factoría and Viajante87 teams. Guests can expect a lineup of drinks that highlight the flavors of the island, featuring the innovative and masterful mixology that has earned La Factoría its place as a multi-time World’s 50 Best Bars honoree. The bar, famed for its lively atmosphere, experimental cocktails, and deep connection to Puerto Rican culture, has become an icon of the Latin American drinks scene.

Following the dinner, the night will continue with a full bar takeover by La Factoría. Guests will have the chance to experience firsthand the energy and creativity that define this renowned Puerto Rican institution, with a menu of cocktails that bring the spirit of Old San Juan straight to London.
Viajante87, which reopened its doors in September 2023 under the leadership of Bar Director Pietro Collina and Brand Manager Veronica Di Pietrantonio, continues to redefine the cocktail and dining experience with its menu inspired by their six-month journey through Latin America. After immersing themselves in the region’s diverse food and drink cultures, The Culture Exchange series is their way of giving back to the community that welcomed them so warmly.


The series, which has previously featured collaborations with esteemed venues such as Metzi with SubAstor, Diengo Chou with Selvática Social Club, Gustu with Florería Atlántico, and Celele with Alquímico, promises yet another unforgettable evening with La Factoría and Chef Raúl Correa.
